RECIPES FOR THOSE GOOD 'OL COURGETTES!

Slice freshly picked courgettes, gently fry in a little oil olive until both sides are lightly golden and crisp. Add torn pieces of fresh mint to top surfaces and, when ready to serve, sprinkle with lemon juice. Simple but delicious. Keep 'em coming!....we seem to produce far more courgettes than we can handle, but this may well help!
